What The Heck Is Salsify?

Mother Earth is indeed a provider. She has blessed us with food a plenty, we just need to know what to look for. We use just a small percentage of the plant life we have on earth for eating. I believe primarily because we don’t know about these edible plants. Not just those that can be foraged but those that are typically garden grown. Over time we have also forgotten some of the fruits and vegetables our ancestors used for medication and eating. Salsify falls into that category. But it doesn’t have to stay that way!
