Items NOT to Can
Like most new canners when I begin canning, I wanted to can anything and everything that would fit in a jar! I was soon disappointed to learn there are items it simply isn’t safe for ME to can. There are a lot of differing opinions in regard to what can and can’t be canned. I personally have come across a couple of items that have me scratching my head and wondering which version of facts to trust my family’s health to. When looking at it that way, my personal choice has been to err on the side of safety and not can the item but make that particular food a freezer stored item! For me those items were cheese, eggs, and bacon.
I advise that you also make your choices on what to can based upon your personal knowledge and ability rather than any recommendations.
