I own and have in operation a large part of the time two dehydrators. I prefer dehydrating to canning when possible. Of course that depends upon the item and what it will be used for etc. First because I live in an earthquake zone and of course dehydrated goods can be stored easily in non breakable containers without any risk of spoilage or damage if shaken off a shelf. Second because it takes up much less space in my pantry! And last but not least because I can preserve small batches with ease, without taking the time to boil and seal etc. It used to be that many thought that drying for preservation was pretty much limited to sun dried tomatoes and to make jerky.
