I decided to share this article for a couple of reasons. First because of the ease of storage when it comes to dehydrated eggs.  However they are not something I would recommend you just cook up and eat! Not great scrambled or over easy. But I have used them a number of times while baking or in cooking another dish. They worked great and no one including myself noted any difference in the taste of the end product.

Secondly, with most dehydrated products you simply have to insure that you leave the product being used long enough in the dehydrator  to get dry enough to store and then store in an airtight container. Most things I have found will keep months to years this way. However, eggs are different from any veggie or fruit you dehydrate. The risk of salmonella is great when dealing with eggs. This is one of those instances where a little knowledge can be a dangerous thing! Eggs require a higher temp while drying than most home dehydrators are capable of sustaining long enough to insure full dehydration while staying at the recommended temperature.

Patrice Lewis from Backwoods Home shares with us her research on finding and accomplishing the task with a reasonable amount of safety. Note I said reasonable, not completely safe. After reading her article and the warnings it contains, this is not a project I choose to risk trying myself. I will stick to purchased egg powder.

If you decide to attempt to dehydrate eggs yourself I strong advise you read carefully her warnings and use her advise as the beginning of your own research to insure the safest process possible.
