I frankly have been shocked many times by the number of people who can’t or don’t cook! Economically it doesn’t make sense. I do understand the younger generation’s tendency to throw something in the microwave and go, as they are in a stage in life where career and social interactions are more urgent than down home basics. Some of my own children are of this frame of mind but I made sure that each and every one of them is capable of going into any pantry and throwing together some kind of reasonable meal and are able to follow a recipe.
Now scratch cooking is as much an art as is gourmet cooking. That is not what the featured article is about! It’s about old time recipes made by the depression era home cook. Money and ingredients were scarce but appetites remained large. Perhaps a bit less health orientated than today’s pallet they were made to fill up hard working laborers with very basic ingredients and effort.
